  • 9 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 1 lbs British Crystal 55°L

    British Crystal 55°L

    Sweet caramel flavor, adds mouthfeel and head retention. For pale or amber ales.

  • 1 lbs Belgian Cara-Pils

    Belgian Cara-Pils

    Significantly increases foam/head retention and body of the beer.

  • 1 oz Cascade - 5.7 AA% pellets; boiled 60 min

Notes

Single infusion mash at 150F. Ferment for five days, transfer to secondary and leave for one week. Crash cool to 34F for a day, then rack off the yeast into keg. Force carb and serve ASAP - this beer tastes best young!

Brew Summary

Finished up brewing about one PM today. I think I will be calling this my "Rainy Day ESB" because it poured down rain right as I finished scum skimming and the wort started to boil. OG was 1.058, I might have boiled off a bit more than I wanted to. Lots of hop flavor in the hydrometer sample. I chilled to about 66F, and will ferment at that temperature as well. Updates to follow.
