Light&Breezy
Blonde Ale • All Grain • 5.5 gal
I love the flavor characteristics of ales, but not one-dimensional lagers. This is a great summertime ale.

White Labs WLP029 German Ale/Kölsch
From a small brewpub in Cologne, Germany, this yeast works great in Kölsch and Alt style beers. Good for light beers like blond and honey. Accentuates hop flavors, similar to WLP001. The slight sulfur produced during fermentation will disappear with age a
Notes
Fermented at 66F, lagered at 34F. Very clean yet flavorful ale. Protein rest helps to clarify wort.

Bottling

Bottled today after one week of primary and two weeks of cold conditioning. Taste is very well rounded - the all-malt backbone comes through very clearly, and the Saaz hops give their distinctive grassy flavor and aroma to the beer. Should be very thirst-quenching...FG was 1.010.
