Maris Otter Pale
An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This is the best beer that I have brewed. I was scared when I sampled it after primary fermentation. To my delight, the dry hops made a BIG difference in the nose. After a two week secondary, I aged it for about a month in tertiary at 34 degrees. It is now crystal clear. This beer is pale (no way it is above 10 SRM), hoppy and a showcases a big rocky head that has unbelievable staying power. If this beer doesn't win a medal somewhere, I am turning in my BJCP credentials. I'll keep you posted.
