  • 5.3 kg Australian Pilsner

    Well modified, good attenuation.

  • .500 kg Wheat Flaked

    Belgian White Ale(wit), other specialty beers.

  • .400 kg Corn Sugar

    Corn Sugar

    Use in priming beer or in extract recipes where flaked maize would be used in a mash.

  • 15 g Tettnanger - 9.8 AA% pellets; boiled 90 min

    Mild, slightly spicy. 'Noble'.

  • 40 g Fuggle - 4.8 AA% pellets; boiled 20 min

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 20 g Czech Saaz - 4.0 AA% pellets; boiled 1 min

  • 10 g Indian coriander freshly ground - (omitted from calculations)

    White Labs WLP565 Belgian Saison I

    Classic Saison yeast from Wallonia. It produces earthy, peppery, and spicy notes. Slightly sweet. With high gravity saisons, brewers may wish to dry the beer with an alternate yeast added after 75% fermentation.

Notes

20min hops are FWH. mashed at 68.5ºC 45'. added 2 heaped tsps gypsum and 2 campden tablets to mashwater. spices added at end of boil. also boiled down 1L of wort for 20mins to add some caramel. fermenting in high 20s Celsius - round 80F.
