Ingredients (All Grain5.5 gal)

  • 11 lbs German 2-row Pils

  • .25 lbs Belgian Aromatic

    Belgian Aromatic

    Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

  • .25 lbs Acidulated Malt

    Acidulated Malt

    High lactic acid. For lambics, sour mash beers, Irish stout, pilsners and wheats.

  • 1.75 lbs Corn Sugar

    Corn Sugar

    Use in priming beer or in extract recipes where flaked maize would be used in a mash.

  • .75 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 1.5 oz Styrian Goldings - 4.5 AA% pellets; boiled 60 min

    Robust flavor yeast with moderate to high alcohol tolerance. Fruity nose and palate, dry, tart finish.

Notes

Rest 15 min at 130 F Sach rest at 149-150 F. 90 min boil. .5 oz. Spalt hops at knock out. Add 2 lb. sugar with 5 minutes left in the boil to prevent carmelization. Hop utilization will be greater than the program indicates. Primary fermentation Upward rising from 64 F. to 80°F for 7 to 10 days - Transfer to secondary, drop temp to 39°F over two days, and cold-condition for three weeks - Drop to 26.6°F for 2 days complete precipitation of the yeast - Rack, add fresh yeast (Same as Primary), and add 3/4 lb. light fruit blossom honey to effectively boost gravity to 1.073-4 (I assume let this ferment out) - Add priming sugar, bottle, and condition for eight to 14 days at 75°F
