If you want that traditional bock malt profile you should use single decoction with a rest at 128-131F, saccharification at 155-158F. Mash out at 168-170F. However, with the amount of malt in this beer, you can sacrifice tradition and use a single infusion at 155F and enjoy all that alcohol. Wow, this is a man's beer!
