I named this Damn Yankee because I'm from Maine living down south, I wanted to brew a Nice Ale that was good for all occasions. I might have succeeded!

Ingredients (All Grain5 gal)

  • 7.80 lbs English 2-row Pils

    English 2-row Pils

    Pilsner base malt.

  • .12 lbs Chocolate Rye Malt

    Chocolate Rye Malt

    Enhances aroma of dark ales and improves color. For dunkel rye wheat and ale.

  • .90 lbs Corn Sugar

    Corn Sugar

    Use in priming beer or in extract recipes where flaked maize would be used in a mash.

  • .45 lbs Light Brown Sugar

    Light Brown Sugar

    Imparts rich, sweet flavor. Use in Scottish ales, old ales and holiday beers.

  • .5 oz Nugget - 13.0 AA% whole; boiled 60 min

    Nugget

    This is very bitter and often used in medium to dark ales and lagers. Aroma is quite heavy and herbal.

  • .5 oz Perle - 9.0 AA% pellets; boiled 18 min

    Perle

    Used mainly for its minty bittering and good green hop aromas in all non-pilsener lagersand wheats. Aroma is pleasant and slightly spicy

  • 0.50 oz Cascade - 5.4 AA% pellets; boiled 2 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

First mash (4 gals) at 163 degrees for 90mins, second mash(3 gals) at 153 degs for 45 mins, boil volume approx 7 gals.After the hotbreak during the boil, Add the nugget and boil for 60mins, 30 mins into boil add Irish Moss or whirlfloc tablet. 42 Mins into boil add the Perle hops and 58 mins into boil add the Cascade. Primary fermentation of 9 days, secondary fermentation of 25 days. Prime for bottling with 2/3cup corn sugar. Allow 2 -3 weeks for conditioning.

This is a good pale ale. Rye added the crispness to the overall taste

I have only had it once but it was enough to convince me to start home brewing!!! Good job dad!
