
Rhino's Romulan Alt

The raw wheat is actually 4lbs. of blue maize flour. Romulan Ale, famous from the historical drama Star Trek, is blue. Interestingly, Romulan ale is produced using yellow and red grains. A Romulan bacterium causes the color change during a tertiary fermentation precipitated by the addition of guabbo extract and alkaline salts. This bacterium also produces the traces of alkaloids that give the beverage its legendary strength, as well as the ketones that produce the equally well respected hangover. It is not practical to brew Romulan Ale on Earth at this time. However, you can brew Romulan Alt, which has an eerie rose color, and which will definitely have your friends thinking you have have brewed a "Star Trek beer" ... Add very hot 180F water to the blue maize flour to produce a slurry. Mix well to eliminate lumps. Let sit a few minutes. The result will be a somewhat stiff mixture that will not pour. Meanwhile, crush grains. Mash as follows Dough in at 125130F, 10 minutes. Add flour mixture, stir, and add heat to raise to 150152F. Maintain at 150152F for 1 hour. Raise to 158F for 10 minutes. Mash out at 170F for 10 minutes.

Notes
Two step mash, 129 for 30-45 minutes, 149-154 for 60 minutes or until iodine test show converted starches are now sugar. As always 1tsp Irish Moss the last 15 min
