If you want a winner here it is, The Carafa 1 is Carafa special 1 or you can use the same amount of chocolate malt. The 40 minute boil is First Wort Hopping or just change the recipe to 15 minutes in the boil. I have one 3 awards with this beer and you will not be disapointed. (trust me)
