  • 5.5 lbs English 2-row Pale

    English 2-row Pale

    All English Ales. Workhorse of British Brewing. Infusion Mash.

  • 2 lbs English Mild Ale

    English Mild Ale

    Dry, nutty malty flavor. Promotes body. Use in English mild ales.

  • .25 lbs British Crystal 55°L

    British Crystal 55°L

    Sweet caramel flavor, adds mouthfeel and head retention. For pale or amber ales.

  • .125 lbs English Wheat Malt

    English Wheat Malt

    Light flavor, creamy head. For wheat beers, stouts, doppelbocks and alt beers.

  • .75 oz East Kent Goldings - 5.0 AA% pellets; boiled 60 min

    East Kent Goldings

    Mild, slightly flowery.

  • .5 oz East Kent Goldings - 5.0 AA% pellets; boiled 30 min

    From Whitbread. Ferments dry and crisp, slightly tart, fruity and well-balanced. Ferments well down to 65F.

Notes

They say opposites attract. It must be true because I am a true "hop-head" while my wife prefers a less hoppy brew. This ale was brewed for her tastes with just a hint of hop flavor and aroma and fairly good malty tones. I used a single step mash at 156° for 45 minutes followed by mash out at 174°. Sparged with 172° water. Force cooled and fermented at 70° for 7 days, then racked to a secondary and held at 50° for 7 days. Kegged and carbonated at 13 psi, this was very drinkable after 2 weeks, but according to my wife, perfectly mellow after about 1 1/2 months.
