I was looking for a good Cream Ale recipe. In these tougher times we make due ... Orginal recipe called for 1.5 lbs rice and 1 oz .Tettnange bittering ... but alas ... here is still a good home brew ..

Ingredients (All Grain5 gal)

  • 7 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1 lbs Belgian Cara-Pils

    Belgian Cara-Pils

    Significantly increases foam/head retention and body of the beer.

  • .5 lbs Midwest Wheat Malt

    Midwest Wheat Malt

    Light flavor and creamy head. For American weizenbier, weissbier and dunkelweiss.

  • 2 lbs Rice Raw

    Rice Raw

    Lightens flavor without taste. Use in American and Asian lagers.

  • .3 oz Nugget - 12.0 AA% pellets; boiled 60 min

    This is very bitter and often used in medium to dark ales and lagers. Aroma is quite heavy and herbal.

  • .5 oz Tettnanger - 4.5 AA% pellets; boiled 15 min

    Mild, slightly spicy. 'Noble'.

  • 1 lb Rice Hulls - (omitted from calculations)

  • Wyeast 2565 Kolsch

    Wyeast 2565 Kolsch

    A hybrid of ale and lager characteristics. This strain develops excellent maltiness with subdued fruitiness, and a crisp finish. Ferments well at moderate temperatures.

Notes

Finely crush the rice in a Corona grain mill or blender ... cook it slowly for 20 minutes in 1 1/2 gallons water, add to mash, however be careful as the rice will get thick while you are cooking it, so ensure that you keep it wet enough so that it does not dry out. I found 1 1/2 gallons of water to be a pretty good start. Mash the grain and rice and rice hulls to help with fluid sparge, together at 150-152F for 60-90 minutes, sparge with 165-170F water. Keep the lauter tun wet, as stuck sparge is easy to come by.

First time brew on 10-9-2004

I just made this and will post updated results as they come. My O.G. was 1.048, and because I was not paying close attention I ended up with a stuck sparge. This won't happen next time, I let the grain bed become dry. If you try this, keep it wet the whole time.

OK, I am half way through the keg and love this batch. Really came out good ... you've got to try this one, it is going to be an awesome summer brew, heck it will be a good all around brew ... good luck if you try it ... post your results OK? Paul.

Just brewed this recipe up. Had a little trouble with the rice and the mash temperature. I haven\'t used that much rice before and it seemed to cool faster than I had planned. Mashed at about 151. Wound up with a SG of 1.054. Its fermenting well, I\'ll post again when I rack it to a keg and let you know how it turned out.

I dry hopped it also, works very well with it, put 2 oz in keg.

Ah come on ... what more do you need to try my recipe ... I have made this one 4 times and everytime it is as good as the last ... I want to try others but this one is so good I keep making it LOL ... Warning, this is good cream ale ... light and tasty ...

Hop Shortage Change required

This recipe originally called for .75 Oz. Tettnanger for 60 and .25 Oz. Tettnanger for 15 minutes, but due to the unavailability of Tettnanger I am substituting bittering with .25 Nugget. I have 1 Oz. Tettnanger and will brew a 10 gallon batch with .5 Nugget and 1 oz, Tett ... I will post an update after it is pouring. Regards, Paul.

This is our second time brewing this beer. We call it Ninja beer because it will sneak up on you and knock you down. We substituted the hops with Williamette since that's all we had. We kept it under 20 IBU's which gives it a nice hop flavor. This is going to be our goto beer for parties.

I adapted this recipie for a challenge. We had to brew a beer using vanilla. Out of 8 entries this beer fell into 4th. It was beat out by more traditional uses(porters and stouts)This beer is an exellent session beer I'll drink it till I drop, and I'll brew it again. I have brewed this twice now, great recipe, and this is coming from someone who usually doesn't dig on the lighter stuff. I changed up the hop bill to .2 oz nugget .25 tett @60 min, .5 oz tett @15 min, and .25 tett @ 1 min. First batch sat in primary for three weeks and then bottled, had white wine like overtones when it was younger, that dissipated some but it stayed a very drinkable brew. My second batch has been in primary for two weeks, I'm going to transfer it to secondary and dry hop it with 1 oz of tett, seems like a good idea, will let you all know how it turns out. I also intend to scale the recipe up a little for a slightly stronger brew and pitch it on top of the yeast cake when I transfer the other batch. I'll make a new recipe entry if it turns out worthwhile. Thanks to Azorean Brewer for another great recipe.
