I Killed Kenny Ale

I Killed Kenny Ale

Special/Best/Premium Bitter • All Grain • 23 L

serve at very low Co2 pressure, or prime at about 1/2 the normal amount. Use a small aperature syringe as a "pocket beer engine" (thanks to Jeff Renner for the tip) to get the thick, dense head over a very low carbonation (american definition=flat) beer.

Ingredients (All Grain23 L)

  • 4.00 kg Maris Otter Pale

    Maris Otter Pale

An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 0.25 kg Crystal Malt 40°L

    Crystal Malt 40°L

Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .01 kg British Black Patent

    British Black Patent

Dry, burnt, chalky character. Use in porters, stouts, brown ales and dark lagers.

  • 14 g Brambling Cross - 6.0 AA% pellets; boiled 60 min

    Brambling Cross

Grandparent of Saxon and Viking, they have a unique toasty, buttery, slighly resiny aroma with some woody notes.

  • 28 g Brambling Cross - 6.0 AA% pellets; boiled 15 min

    Brambling Cross

Grandparent of Saxon and Viking, they have a unique toasty, buttery, slighly resiny aroma with some woody notes.

  • 28 g East Kent Goldings - 5.0 AA% pellets; boiled 15 min

    East Kent Goldings

    Mild, slightly flowery.

  • 1/2 tsp irish moss @ 15 - (omitted from calculations)

    irish moss @ 15

  • Wyeast 1275 Thames Valley Ale™

    Wyeast 1275 Thames Valley Ale™

Produces classic British bitters, rich complex flavor profile, clean, light malt character, low fruitiness, low esters, well-balanced.

Notes

This is a bitter that leans a little toward a Kilk*nny Irish Red Ale, meant to be served at very low carbonation. A useful trick is to use a 10cc syringe to suck up a bit of the beer and inject it back in to create the thick kilk*nny head. This would be a better Irish ale with Wy 1084, but I like it with 1275.
