serve at very low Co2 pressure, or prime at about 1/2 the normal amount. Use a small aperature syringe as a "pocket beer engine" (thanks to Jeff Renner for the tip) to get the thick, dense head over a very low carbonation (american definition=flat) beer.

Notes
This is a bitter that leans a little toward a Kilk*nny Irish Red Ale, meant to be served at very low carbonation. A useful trick is to use a 10cc syringe to suck up a bit of the beer and inject it back in to create the thick kilk*nny head. This would be a better Irish ale with Wy 1084, but I like it with 1275.
