Ingredients (Extract5 gal)

  • 1/2 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 4 lbs Liquid Amber Extract

    Liquid Amber Extract

    Amber is used predominantly in the production of medium-colored beers such as pale ales, IPAs, and bitters.

  • 1.5 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 1 lbs Corn Sugar

    Corn Sugar

    Use in priming beer or in extract recipes where flaked maize would be used in a mash.

  • 1 1/2 oz Cascade - 5.5 AA% pellets; boiled 60 min

    Spicy with citrus notes. Slightly grapefruity.

  • .5 oz Saaz - 5.0 AA% pellets; boiled 1 min

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

    Wyeast 2565 Kolsch

    A hybrid of ale and lager characteristics. This strain develops excellent maltiness with subdued fruitiness, and a crisp finish. Ferments well at moderate temperatures.

Notes

This experimental brew is a concoction inspired by St. Croiz Brewing Co's, Serrano Pepper Ale. The liquid extract is a can of Coopers Draught ale I'm assuming its amber and hopped with cascade hops. Steep Crystal malt for 30 minutes at 180F. Bring to boil and add liquid extract and dry extract. boil for 25 minutes, add peppers. Boil for an additional 5 minutes then remove from heat and let peppers steep for additional 15 minutes. test jar was lightly sweet with a neat little bite that will mellow I'm sure with aging. Good brew.
