Used my "Anchor Ale" recipe as a base to build from. Inspired by an article in "BYO" from the 12/03 issue....

Ingredients (Extract, 5 gal)

Belgian Caravienne

Belgian light crystal malt. Used in lighter Abbey or Trappist style ales.

Significantly increases foam/head retention and body of the beer.

Contains no colored malts or unmalted products; the light color of this product is achieved by using low processing temperatures and low-colored raw materials.

Made with a preponderance of wheat malt (55%) for the production of wheat or Weiss beers. Contains no colored malts or hops.

Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

Inspired by BYO's article in their 12/03 issue. I used my Anchor Ale recipe as a base.... Added to a yeast cake, 2 regular-strength-beers old.

Dry hop and first tastes

I used 1.5-2 oz cascade for dry hopping. This tastes like rocket fuel right out of the secondary. Don't worry. It gets better... even after just one month of aging it is turning out to be quite good. I plan to let it age for at least a few more months. Then I'll give my final opinion.
