Ingredients (All Grain11 gal)

  • 20 lbs German Light Munich

    For a desired malty, nutty flavor. Lagers, Oktoberfests and bock beer.

  • .5 lbs Caramel Wheat Malt

    Caramel Wheat Malt

    For dark ales, hefeweizen, dunkelweizen, wheat bocks and double bocks.

  • 1.5 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 1 lbs Belgian Aromatic

    Belgian Aromatic

    Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

  • 3 lbs Weyermann CaraRed®; Weyermann

    Weyermann CaraRed®; Weyermann

    Red Ale, Red Lager, Scottish Ale, Amber Wheat, Bock Beer, Brown Ale, Alt Beer

  • 2 lbs German Dark Munich

    German Dark Munich

  • 2 oz Magnum - 14.5 AA% pellets; boiled 60 min

    Bred in 1980 at Germany’s Hüll Hop Research Center, this high-alpha variety is renowned for its exceptionally large, heavy cones. Hallertauer Magnum delivers excellent yields and, like many Hüll-developed hops, boasts a strong resistance to disease.

  • 2 oz Hallertauer Hersbrucker - 4.5 AA% pellets; boiled 15 min

    Mild to strong. 'Noble'.

  • 1 oz Spalt Spalter - 4.8 AA% whole; boiled 1 min

    Mild, slightly spicy. 'Noble'.

  • Wyeast 1338 European Ale™

    Wyeast 1338 European Ale™

    From Wissenschaftliche in Munich. Full-bodied complex strain finishing very malty. Produces a dense, rocky head during fermentation.

Notes

This ale is an ideal candidate for a decoction mash. It should be fermented at the lower end of the temperature range for ales, followed by a couple of months of lagering. If you don't feel like using a german ale yeast, a California Common (or Steam) yeast might make a nice alternative.
