Ingredients (Extract5 gal)

  • 1 lbs British Crystal 55°L

    British Crystal 55°L

    Sweet caramel flavor, adds mouthfeel and head retention. For pale or amber ales.

  • 4.2 lbs Dry Amber Extract

    Dry Amber Extract

    Cream-colored and full-flavored; will produce amber colored beers such as pale ales, IPAs, and bitters. Made of pale and crystal malts.

  • 1 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 2 oz Cascade - 5.5 AA% whole; boiled 30 min

    Spicy with citrus notes. Slightly grapefruity.

  • 2 oz Goldings - 5.0 AA% pellets; boiled 15 min

    Goldings

    Mild. Slightly flowery.

  • Wyeast 1272 American Ale II™

    Wyeast 1272 American Ale II™

    Fruitier and more flocculant than 1056, slightly nutty, soft, clean, slightly tart finish.

Notes

I used buckwheat blossom honey (1-1/3 cup, assuming 12lb/gal), which gives a darker color than predicted here. I also used homegrown cascade hops (Goldings were purchased). Measured OG was 1.047. Measured FG was 1.011 at bottling. Due to an unexpected autumn weather warm-up, fermentation temperatures got a bit high (upper 70s). Tasted at bottling time, and this will need some time to balance out! Pretty odd flavor. After two weeks, it's drinkable, but there's a bit of a winey off flavor that will need some time. Six weeks after bottling (inluding one week in the fridge) and it's improved greatly. Nice head retention and the off flavors seem to have worked out. This one is definitely worth brewing again.

Unique, pleasant, and improved with time.

I used homegrown Cascade and buckwheat blossom honey, which made it darker than predicted here. A nice brown ale that turned out to be a crowd pleaser.
