Ingredients (Extract5 gal)

  • 1 lbs Belgian Caravienne

    Belgian Caravienne

    Belgian light crystal malt. Used in lighter Abbey or Trappist style ales.

  • 3 lbs Dry Extra Light; Muntons

    Dry Extra Light; Muntons

    Contains no colored malts or unmalted products; the light color of this product is achieved by using low processing temperatures and low-colored raw materials.

  • 1.5 lbs Dry Light; Muntons

    Dry Light; Muntons

    Used as the base for a wide variety of styles of beers, including lager, pale ales, bitters, and export bitters. Contains no colored malts.

  • .5 lbs Dry Wheat; Muntons

    Dry Wheat; Muntons

    Made with a preponderance of wheat malt (55%) for the production of wheat or Weiss beers. Contains no colored malts or hops.

  • 1 lbs Candi Sugar Clear

    Candi Sugar Clear

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 1.5 oz Cascade - 5.5 AA% pellets; boiled 60 min

    White Labs WLP051 California Ale V

    From Northern California. This strain is more fruity than WLP001, and slightly more flocculant. Attenuation is lower, resulting in a fuller bodied beer than with WLP001.

Notes

Mashed 1lb. Caravienne malts in 1 gal. water 20 mins. 7/30/03 - OG actually wound up 1.062 and TG came in about 1.009. Somehow I had pretty high gravity and very complete fermentation. Came out with a bit of a Strong Ale I think. We'll see how the head looks after kegging.

Funny I forgot all about this recipe. For the past 3 years I've been brewing this recipe alot. Each time I modified the hops slightly or raised/lowered the wheat content to fit the occasion. Most everybody that tries it, loves it and wants the recipe. Enjoy if you brew it.
