Accidently stumbled on this beer while travelling in England. Couldn't find it over here, and went crazy until I could copy it. Just malty enough without being sweet, just hoppy enough without being harsh, and with enough flavor to keep you going back for more. Holds its own when served with roast beef, pork or lamb.

  • 2 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • .875 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 1 lbs English Wheat Malt

    English Wheat Malt

    Light flavor, creamy head. For wheat beers, stouts, doppelbocks and alt beers.

  • .5 lbs Dextrine Malt

    Dextrine Malt

    In light-colored beers to give additional body. Adds richness without color.

  • .25 lbs Belgian Aromatic

    Belgian Aromatic

    Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

  • .03 lbs Roasted Barley

    Mild, slightly flowery.

  • .25 oz Fuggle - 4.8 AA% pellets; boiled 10 min

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • .25 oz Target - 8.5 AA% pellets; boiled 10 min

    Target

    Used for its robust bittering ability in British ales and lagers. Aroma is quite intense.

  • .50 oz East Kent Goldings - 4.8 AA% pellets; boiled 1 min

    Mild, slightly flowery.

  • White Labs WLP005 British Ale

    White Labs WLP005 British Ale

    This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.

Notes

Since this is an extract with specialty grain recipe, you should soak the grains in 1.5 gallons of 149 degree water for 60 minutes and then rinse them off with 1.5 gallons of 160 degree water. Add the malt extract, mix completely, heat to boil and add hops per schedule. When done, cool, add to fermentor, add water to make 5.5 gallons, when temperature is 70 degrees pitch yeast.
