Ingredients (All Grain5 gal)

  • 11.0 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 2.0 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 2.0 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 2.0 lbs Rice Raw

    Rice Raw

    Lightens flavor without taste. Use in American and Asian lagers.

  • 2.0 oz East Kent Goldings - 5.0 AA% pellets; boiled 50 min

    East Kent Goldings

    Mild, slightly flowery.

  • 1/2 oz Cascade - 5.5 AA% pellets; boiled 10 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • Wyeast 2565 Kolsch

    Wyeast 2565 Kolsch

    A hybrid of ale and lager characteristics. This strain develops excellent maltiness with subdued fruitiness, and a crisp finish. Ferments well at moderate temperatures.

Notes

Follow step temperature procedure. Add four sticks of Cinnamon 30 minutes into the wort boil. Use a Beligan White Wyeast Yeast. This truly a Holiday or Octoberfest Beer.
