This is a great kolsch. Highly recommend you give this a single decoction to improve flavour and colour. The unusual yeast pitching makes this a very easy drinking beer

  • 20 g Pride of Ringwood - 8.5 AA% whole; boiled 60 min

    Moderate.

  • 5 g Hallertauer Hersbrucker - 4.5 AA% whole; boiled 30 min

    Mild to strong. 'Noble'.

  • 5 g Hallertauer Hersbrucker - 4.5 AA% whole; boiled 20 min

    Wyeast 3766 Cider

    Crisp dry fermenting yeast with big, fruity finish. Creates a nice balance for all types of apples, pears and other fruit or fermentables. Allows fruit character to dominate the profile.

Notes

The raw wheat is a nice touch and balances the light crystal nicely. The flavour hops are added in stages for suttle complexity. yeast is important. Add German Ale yeast first and ferment for 4 days at 15c. Then add Munich lager yeast and ferment at 10c til completion. This allows a very very mild fruitiness, with the attentuation and characteristic of an good lager. A single decoction will make this beer, bringing up the colour and flavour. This is a very easy drinking beer, with a higher alcohol than you would normally expect from a Kolsch.
