This is a mild, light bodied beer, that has the fantastic aroma and flavor of the classic Saaz hops. This is one beer you are going to want to make a lot of, simply because it is so easy to drink.

Ingredients (All Grain5 gal)

  • 6 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 2 lbs White Wheat Malt

    White Wheat Malt

    Weizens. Improves head retention in all beers. Contributes spicy flavor. Protein rest required.

  • .75 lbs Rice Flaked

    Rice Flaked

    Used to add fermentables without increasing body or flavor. Produces a milder, less grainy tasting beer. Examples: American lagers, Bohemian lagers, Pilsners

  • .5 oz Czech Saaz - 5.0 AA% pellets; boiled 60 min

    Czech Saaz

    Very mild. 'Noble'.

  • .25 oz Cascade - 5.5 AA% pellets; boiled 30 min

    Spicy with citrus notes. Slightly grapefruity.

Notes

Mash grains at 150 degrees for 60 minutes, sparge with 160 degree water. Bring to boil and add hops per schedule. At end of 60 minute boil cool wort quickly, when it reaches 80 degrees pitch yeast. Primary ferment between 68 - 73 degrees for one week, then rack to secondary and add dry hops. Keep in secondary for 2 weeks, then prime with 3/4 cup corn sugar and bottle. Condition in bottle for at least a week.

Perfectly light and creamy

I decided I wanted to do a cream ale with peach flavoring (Peaches and Cream) so I used this recipe as the base. This recipe was perfect, and simple. I used Burton on Trent salts with distilled water, and put in the peach flavoring at the start of the primary fermentation. The final product is the best beer I have brewed, and my wifes favorite. Thanks Anne!
