This beer starts with the aroma of fruits and spices. It has a very full mouthfeel and many complex flavors, including light roasted malt, alcohol, dried fruit and spices. The finish is long and spicy with slight hints of pepper and nutmeg.

  • 7 lbs Belgian Pils

    Belgian Pils

    Pilsner style malted barley grain.

  • 4 lbs Maris Otter Pale

    White Labs WLP500 Trappist Ale

    From one of the six Trappist breweries remaining in the world, this yeast produces the distinctive fruitiness and plum characteristics. Excellent yeast for high gravity beers, Belgian ales, dubbels and trippels.

Notes

This is as close to Chimay Grande Reserve as it gets. I use a two step infusion mash - with the first step at 104, second step should be at 149. Add the crushed Grains of Paradise with the second addition of hops. Primary ferment between 70 and 72 degrees for 7 days, then rack into a secondary for 3 weeks at 70 degrees. Prime with 1 1/4 cups light dry malt extract, bottle and store between 60 and 70 degrees for a minimum of 1 month. This beer will keep getting better for up to a year if cellared properly.
