Ingredients (Extract5.25 gal)

  • 1/2 lbs American Chocolate Malt

    American Chocolate Malt

Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • 1/3 lbs Black Roasted Barley

    Black Roasted Barley

Unmalted roasted grain, it is the backbone of many stouts. Imparts a sharp acrid flavor characteristic of dry stouts. Gives "dryness" to a stout or porter ,more so than regular Roasted Barley.

  • 1/4 lbs Crystal Malt 60°L

    Crystal Malt 60°L

Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 3/4 lbs Crystal Malt 120°L

    Crystal Malt 120°L

Pronounced caramel flavor and a red color. For stouts, porters and black beers.

  • 9.9 lbs Liquid Amber Extract

    Liquid Amber Extract

Amber is used predominantly in the production of medium-colored beers such as pale ales, IPAs, and bitters.

  • 1 oz Northern Brewer - 7.4 AA% pellets; boiled 60 min

    Northern Brewer

Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • 1/2 oz Tettnanger - 4.5 AA% pellets; boiled 15 min

    Tettnanger

    Mild, slightly spicy. 'Noble'.

  • 1/2 oz Tettnanger - 4.5 AA% pellets; boiled 5 min

    Tettnanger

    Mild, slightly spicy. 'Noble'.

  • 1 tsp Irish Moss - (omitted from calculations)

    Irish Moss

  • White Labs WLP028 Edinburgh Scottish Ale

White Labs WLP028 Edinburgh Scottish Ale

Scotland is famous for its malty, strong ales. This yeast can reproduce complex, flavorful Scottish style ales. This yeast can be an everyday strain, similar to WLP001. Hop character is not muted with this strain, as it is with WLP002.

Notes

NW Amber Malt Brewed 4/5/03 Brewed for a good friend of mine. Slight variation on a previous batch that came out really well.
