Ingredients (Extract5 gal)

  • .5 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .25 lbs English Chocolate Malt

    English Chocolate Malt

    Dark malt that gives a rich red or brown color and nutty flavor. Use for: Brown ales, porters, some stouts Maintains some malty flavor, not as dark as roasted malt.

  • 12 lbs Pale Liquid; Alexanders

    Pale Liquid; Alexanders

    Reportedly lightest colored malt extract available.

  • 1 oz Cascade - 5.5 AA% pellets; boiled 60 min

    Spicy with citrus notes. Slightly grapefruity.

  • 1 oz Styrian Goldings - 6.0 AA% pellets; boiled 60 min

    BrewTek CL-380 Saison

    This yeast leaves a smooth, full character in the malt, with mild yet pleasant esters and flavors reminiscent of apple pie spices. Best used to recreate country French and Belgian Ales as well as Grand Cru styles.

Notes

Total boil time is 60 minutes. Primary fermentation is 1 week; secondary fermentation is 9 weeks; allow two weeks in the bottle. The blackberries, added at the end of the boil 0 min, will add blackberry flavor, and purple color, to the brew. The end result is a little sweet, so more bittering may be desired.
