Ingredients (All Grain5 gal)

  • 10 lbs Belgian Pale

    Belgian Pale

    Fully modified and is easily converted.

  • .5 lbs Crystal Malt 10°L

    Crystal Malt 10°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales. Characteristics & Applications: • In contract to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • Caramel 10L is a roasted caramel malt that imparts golden color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

  • .25 lbs Belgian Aromatic

    Belgian Aromatic

    Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

  • 1 lbs Candi Sugar Clear

    Candi Sugar Clear

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 1 lbs Corn Sugar

    Corn Sugar

    Use in priming beer or in extract recipes where flaked maize would be used in a mash.

  • .5 lbs White Table Sugar (Sucrose)

    White Table Sugar (Sucrose)

    Common household table/baking sugar. Lightens flavor and body of beer. Can contribute a cider-like flavor to the beer if not cold-fermented or used in large quantities.

  • 1 oz Styrian Goldings - 5.2 AA% pellets; boiled 60 min

    Mild, pleasant.

  • .5 oz Styrian Goldings - 5.2 AA% pellets; boiled 15 min

    Mild, pleasant.

  • .5 oz Czech Saaz - 3.5 AA% pellets; boiled 15 min

    Czech Saaz

    Very mild. 'Noble'.

  • .5 oz Styrian Goldings - 5.2 AA% pellets; boiled 5 min

  • 1 tsp Irish Moss - (omitted from calculations)

    Robust flavor yeast with moderate to high alcohol tolerance. Fruity nose and palate, dry, tart finish.

Notes

An attempt to clone 'Duvel', a strong Belgian ale. I have not decided whether it is pears or green apples that is the fruity taste. This is untried, I will let you know in a few months.
