An old favorite of my friends and family. It was originally based on an old CAP, but it's been modified quite a bit in several versions over the years.

Ingredients (All Grain5 gal)

  • 7.25 lbs American 6-row Pale

    American 6-row Pale

    Tends to increase lautering efficiency due to a stiffer husk. May be used as the base malt for any beer style. The enzymes in all varieties of the current crop are sufficient to support high percentages of specialty malts and adjuncts.

  • 0.50 lbs German Dark Munich

    German Dark Munich

    Enhances body and aroma. Stout, schwarzbier, brown ale, dark and amber ales.

  • 2.25 lbs Corn Flaked (Maize)

    Corn Flaked (Maize)

    Generally a neutral flavor, used to reduce maltiness of beer. Produces beer with a milder, less malty flavor. Uses: Primarily for light Bohemian and Pilsner lagers.

  • 0.25 oz Cluster - 6.4 AA% pellets; boiled 60 min

    Cluster

    Used for bittering and flavor qualities in light and dark American lagers. Aroma is very floral.

  • 0.50 oz Mt. Hood - 5.4 AA% pellets; boiled 45 min

    Mt. Hood

    Used mainly for aroma and flavor in American and German style ales and lagers. Aroma is mild, pleasant, light, and clean.

  • 0.50 oz Saaz - 2.8 AA% pellets; boiled 0 min

    Saaz

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

A work in progress. It was originally based upon an old CAP recipe that I found in an article on American Pilseners in Brewing Technique's online archive a few years ago. I've tweaked it a lot in the several versions that I've brewed since then, but I've never gotten the bitterness just right for my tastes. This is the latest version of this old personal favorite.
