White Labs WLP840 American Lager
This yeast is used to produce American style lagers. Dry and clean with a very slight apple fruitiness. Sulfur and diacetyl production is minimal.
Notes
Double Mash. Steps at 95F, 122F, 149F and 168F. Cereal mash 3:2 rice to malt. Same mash steps and final boil to gelatinize rice. Add back to main mash to raise main mash to 149F. Infusion or direct heat to hit steps. Dilute in primary fermenter 2:1 wort to sterile water. Choose a yeast that produces low diacetyl and use a diacetyl rest just before racking to secondary. OG after dilution should be about 1.066 or so.
