Not particularly daring, but very tasty and refreshing. All grain version inspired by my Two Angry Cats Cream Ale.

Tends to increase lautering efficiency due to a stiffer husk. May be used as the base malt for any beer style. The enzymes in all varieties of the current crop are sufficient to support high percentages of specialty malts and adjuncts.

Light flavor and creamy head. For American weizenbier, weissbier and dunkelweiss.

Spicy with citrus notes. Slightly grapefruity.

Mild. 'Noble'. Used mainly for its aroma which is mild and pleasant.

Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.
Notes
Do a protein rest of 122* for 30 min at 1 quart/pound to get the best out of this brew. My sacc. mash is at 152* for 60 min. at 1.25 quart/pound.
