I didn't create this recipe but i took a minute to answer your concern in regards brewing with DME. There is really no difference between the liquid and the dry other than dissolving the malt extract. Then follow the same steps: bring to boil, turn heat off. dissolve malts, sugars, etc., add hops and turn heat on, and boil for for 60 minutes. Cool wort down to 75*, add to fermenter, and pitch yeast. See the tutorials in this website for more info http://www.beertools.com/html/tutorial/index.shtml

No 2 Row?

When brewing with Corn Flaked (Maize) I have heard that you need to mash in combination with 2-row in order to get conversion because the corn by itself doesn't have any diastolic power. If you brewed this as is it will taste like a beer with corn starch dumped into it. I brewed a modified version of this recipe using 5lbs of 2-row, 3lbs maize and 1lb of DME. I'll post back as to how it turns out.

Lagering in Secondary Now

2010-01-31 2:42pm

This recipe has been lagering in my secondary for 2 weeks now. I tasted a sample taken for a hydrometer reading and so far it taste great. I didn't have a Corona to directly compare it to. Very light clean profile with a nice hot bite in the after taste. Next time I might use slightly less corn but other than that defiantly has an American Lager taste.

First bottle

Cracked first bottle (little early)... Extremely light beer but compared to Corona I actually like it better. That said it right now it has a water like mouth feel so that may need to be tweaked in the recipe but not a bad brew.

So final word on brew...

I opened one recently next to a light lager and compared. This one taste sweeter than a typical American lager (probably due to the amount of corn). It is good in it's own right but not a corona clone. Might try some amylase enzyme (in secondary) next time to cut the corn flavor.
