Ingredients (Extract5 gal)

  • 1 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .75 lbs Dextrine Malt

    Dextrine Malt

    In light-colored beers to give additional body. Adds richness without color.

  • 7 lbs Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 1.25 oz Perle - 8.2 AA% pellets; boiled 60 min

    Perle

    Used mainly for its minty bittering and good green hop aromas in all non-pilsener lagersand wheats. Aroma is pleasant and slightly spicy

  • 1 oz Cascade - 5.5 AA% pellets; boiled 15 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 1 oz Cascade - 5.5 AA% pellets; boiled 1 min

  • White Labs WLP001 California Ale

    White Labs WLP001 California Ale

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

1 hour boil. 60 minutes with Perle, 15 minutes Cascade, and 1 minute cascade. Chilled brew kettle in ice bath, pitched yeast at 73 degrees. OG much higher than expected, 1.080? Will primary and seconday. FG 1.035, for 5.895%. Light in color, great taste. Great brew. This beer has now aged in the bottle for three weeks or so. I'm really pleased with the outcome, Perle hops really contribute nicely and give that 'California' flavor I associate with Sierra. I will definitely come back to this recipe, it is one my favorites so far and is a fabulous summer brew.
