Ingredients (All Grain5 gal)

  • 8 lbs American 6-row Pale

    American 6-row Pale

    Tends to increase lautering efficiency due to a stiffer husk. May be used as the base malt for any beer style. The enzymes in all varieties of the current crop are sufficient to support high percentages of specialty malts and adjuncts.

  • .25 lbs Belgian Aromatic

    Belgian Aromatic

    Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

  • 2 lbs American Caramel 40°L

    American Caramel 40°L

    Provides color, a unique flavor, body, and contributes to foam retention and beer stability.

  • .25 lbs Barley Flaked

    Barley Flaked

    Helps head retention, imparts creamy smoothness. For porters and stouts.

  • 1 oz Cascade - 5.5 AA% pellets; boiled 60 min

    Spicy with citrus notes. Slightly grapefruity.

  • 1 oz Willamette - 5.0 AA% pellets; boiled 15 min

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

This is my first all grain batch, I am mashing at 1 quart/pound, I may try it differently next time. Mash grains for 90 minutes at 158*F, sparging with 170*F water. Add boiling hops and boil 60 minutes. During the last 15 minutes add the finishing hops and spices. Funnel to primary fermentor. Add cool clean water to top to 5 gallons, cool to 80* and pitch rehydrated yeast. Ferment 5-7 days, Siphon to secondary fermentor and let settle for 5-7 days. Prime with 3/4 cup corn surgar in bottling bucket and bottle. Works better if you keg it with 1/2 cup corn sugar.
