This Bavarian Dunkelweizen will be made Parti-Gyle style from the last two-third runnings after a big Barleywine. The Caramel Wheat and Chocolate Wheat Malt will be steeped with the last 1.5 gallons and then added to the boil. This will add a considerable amount of wheat malt flavoring to make up for the lower percentage of base wheat malt. The cooled wort will be siphoned into the primary over a yeast cake from a 1 week old Bavarian Weizen.

  • 6 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 3 lbs White Wheat Malt

    White Wheat Malt

    Weizens. Improves head retention in all beers. Contributes spicy flavor. Protein rest required.

  • 1 lbs Caramel Wheat Malt

    Caramel Wheat Malt

    For dark ales, hefeweizen, dunkelweizen, wheat bocks and double bocks.

  • 0.375 lbs Chocolate Wheat Malt

    Chocolate Wheat Malt

    Intensifies aroma; improves color. For dark ales, alt, dark wheat, stout and porter.

  • 1 oz Liberty - 4.0 AA% pellets; boiled 60 min

    Liberty

    Used mainly for finishing German and American style ales and lagers. Aroma is mild and pleasant.

  • White Labs WLP300 Hefewizen Ale

    White Labs WLP300 Hefewizen Ale

    This famous German yeast is a strain used in the production of traditional, authentic wheat beers. It produces the banana and clove nose traditionally associated with German wheat beers and leaves the desired cloudy look of traditional German wheat beers.
