Step Mash.Use a protein rest at 118-122 deg F. for 30 min. Then a Beta rest at 140 deg.F. for 15 Min. Boost to 152-154 deg. until conversion. I cook the rice the night before in 6 qts water. Bring water to boil,turn off heat,then stir in raw white rice. Cover pot with towel and let it sit until the morning. Works great!
