My wife has been after me to brew a lighter beer, so I've worked out this recipe.

Ingredients (Extract, 5 gal)

For making very pale ales and lagers.

White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

Corn Sugar
Use in priming beer or in extract recipes where flaked maize would be used in a mash.
- 1.5 oz
Cascade - 5.5 AA% pellets; boiled 60 min

Spicy with citrus notes. Slightly grapefruity.

This yeast produces a very malty, bock like style. It does not finish as dry as WLP830. This yeast is much slower in the first generation than WLP830, so we encourage a larger starter to be used the first generation or schedule a longer lagering time.

First try

Brewed this weekend. I had a problem with fermentation getting started. Used a White Labs #WLP820 Oktoberfest/Marzen yeast (my brewstore doesn't carry WYeast), and it was apparently too cold in the garage (52 degrees) for fermentation to get started. I moved it back inside yesterday, and I've got a nice, bright, white foam coming out of the airlock.

Original Gravity was 1.061, which is closer to recipe than anything I've gotten when brewing from a kit.

Primary fermentation seems to have slowed/stopped, with a gravity tested last night of 1.023.

Final gravity of 1.014, 6.169% ABV.

Tried the first of this yesterday. Nice deep straw color, high carbonation, and a beautiful bright white head. Tastes pretty good, too! My wife proclaimed this "the best beer you've made yet". Mission accomplished!
