Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

Wyeast 2565 Kolsch
A hybrid of ale and lager characteristics. This strain develops excellent maltiness with subdued fruitiness, and a crisp finish. Ferments well at moderate temperatures.
Notes
This 8-gallon batch is split into two batches. One receives a Trappist 3787 yeast and the other is pitched with 1728 Scottish ale. Fermentation temp for both is in the low 50's Farenheit.
