I brewed this beer on 12/30/02 (OG 1.064) and racked from the bucket to the carboy on 1/1/03 and then again on 1/4/03 at which time the SG was down to 1.026. I like the color and it has a fantastic aroma (allright, I'm a bubble sniffer). The color is a little dark, so next time I would probably drop the choc and black malt to 1.5 ounces each. Will add updates as it progresses. Ed

I doughed in with 4.3125 gals. @ 168d to bring the temp to 153d. I held it there for 90 minutes. raised the temp (it took 25 minutes) then put it into the cooler and recirculated for 30 minutes. Then I sparged with 4 gallons @ 180d +/-. Hop schedule was as follows: 1 oz Fuggle....60 min .5 oz EKG......60 min .5 oz EKG......15 min(w/ ir. moss & burton salts) 1 oz Fuggle....10 min 1 oz EKG.......5 min During the primary ferment it had a nice sweeet candy-like aroma from the airlock. Right now I'm waiting for it to finish, it was 1.026 wqhen last I checked, now its 1.022. So its getting close to final grav., just slowly. Ed

Contrary to the previous post, I dont think I would change a thing. I am very happy with this brew, it has a big bold flavor and nice hop complexity. This one is a winner, and my wife loves it. Because of this beer I might be able to talk her into kegging soon!! Ed
