1st attempt at formulating a barley wine. I will wait to hear back from the wizards before I make it final. Herd back and have mad the changes.

Ingredients (Partial Mash6 gal)

  • 15 lbs English 2-row Pale

    English 2-row Pale

    All English Ales. Workhorse of British Brewing. Infusion Mash.

  • 1 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 3 lbs Munich Malt

    Munich Malt

    Sweet, toasted flavor and aroma. For Oktoberfests and malty styles

  • 0.75 lbs English Wheat Malt

    English Wheat Malt

    Light flavor, creamy head. For wheat beers, stouts, doppelbocks and alt beers.

  • 0.75 lbs Dextrine Malt

    Dextrine Malt

    In light-colored beers to give additional body. Adds richness without color.

  • 2 lbs Dry Extra Light; Muntons

    Dry Extra Light; Muntons

    Contains no colored malts or unmalted products; the light color of this product is achieved by using low processing temperatures and low-colored raw materials.

  • 1.5 oz Chinook - 11.9 AA% pellets; boiled 60 min

    Chinook

    Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.

  • 1.5 oz East Kent Goldings - 5.0 AA% whole; boiled 30 min

    Mild, slightly flowery.

  • 1 oz Cascade - 5.5 AA% whole; boiled 30 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 1 oz Cascade - 5.5 AA% whole; boiled 10 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 1 oz Centennial - 9.9 AA% whole; boiled 10 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

    From Whitbread. Ferments dry and crisp, slightly tart, fruity and well-balanced. Ferments well down to 65F.

Notes

Here are the Changes: Dropped the crystal 60 L from 2 to 1 lb. Upped the Munich from 2 to 3 lbs. bumped up the Wheat and cara pils 0.25 lbs. Added some extract when before there was none and thus was able to reduce the volume of the mash. Hops are changed a lot. I want this to be more of an american Barleywine. We will see!
