  • 1 lbs American Caramel 60°L

  • 6.5 lbs Dry Light; Muntons

    Dry Light; Muntons

    Used as the base for a wide variety of styles of beers, including lager, pale ales, bitters, and export bitters. Contains no colored malts.

  • 1 lbs Dry Wheat; Muntons

    Dry Wheat; Muntons

    Made with a preponderance of wheat malt (55%) for the production of wheat or Weiss beers. Contains no colored malts or hops.

  • 1.5 oz Cascade - 6.3 AA% pellets; boiled 60 min

Notes

* OG: 1.070 (Corrected) * The beer is VERY cloudy as I forgot to add the Irish Moss. Oh well. * The beer is VERY dark - I think I'm done using any amber malt at all (I used a 50/50 mix of Amber and Light - Should have called it "Not so pale Pale Ale".)Live and learn. * Maybe try Columbus hops next time.

First tasting

12.01.2002: Had my first tasting out of the secondary today. WOW! Who needs to bottle, I'm tempted to stick a straw in there and just suck it down. It's dry hopping now, can only get better with age. Mmmm... Beer. Gravity: 1.021 corrected.

Bottled today - 12/14/2002

Hmm... FG of 1.020 which is a little high. Was it the wheat? I've never used wheat before, I'm going to assume that it was. I lose quite a bit (about 12 bottles) due to a siphon problem and a phone call that came at exactly the wrong moment and kind of distracted me from the task at hand. Oh well. :) Shit happens. Made 38 12oz bottle, with enough sugar for 48 or 50. I hope this doesn't make bottle bombs. We'll find out soon enough I guess. The beer was absolutely delicious at bottling. I can't until it's cool and carbonated.

12.30.02 and it's been in the bottle a while now

Wow. Wow. Wow. Wow. This stuff is delicious. Comes at you with a big hoppy bite and finishes with a slightly detectable, though very mild, sweetness. I'm thinking that the wheat may have been the key here. Needs a bit more flavor hops. Next batch will probably be 2oz flavor, 2oz aroma, and 2oz dry hops. That's a total of 6oz in the boil.... Mmm.... Hops...
