Notes

1. Add 1-1/2 gallons cold water to your brew pot. Heat the water. Once the water is hot, turn off heat ( to prevent scorching the malt, and add the 6 pounds malt extract syrup and stir until dissolved. If you have room top up pot to 2 & 1/2 gallons (total liquid in pot) Resume heat and bring to a boil 2. Add the bittering hops When the wort is boiling add 1 oz Tettnanger hops and boil for 30 minutes. 3. Add the aroma hops Add the second 1 oz packet of Tettnanger hops & the packet of Irish moss and honey and boil an additional 10 minutes. Turn off heat. 4. Transfer to primary fermenter Pour the wort into the primary fermenter that contains the 3 & 1/2 gallons cold water being careful to leave most of the sediment in the bottom of the pot behind. Total liquid content in fermenter should be 5 gallons ( 6 gallons for a lighter beer) 5. Take a hydrometer reading Sterilize the hydrometer and drop it right into the primary fermenter. Record the reading on the hydrometer ( the level the liquid in the primary fermenter reaches on the hydrometer) for later purposes. 6. Pitch the yeast When the wort has cooled to 85 degrees it's time to add the yeast.
