Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

Fruitier and more flocculant than 1056, slightly nutty, soft, clean, slightly tart finish.
Notes
Add 12 quarts 170F water to mash tun to achive Mash temp. of 150-154F for 90 min.s, sparge and set kitchen timer for a 60 minute boil, and add bittering hops. Coarsely chop the cranberries in a blender or food processor and put them into musslin sacks, tie off the sack(s) and add them to the boil with 20 minutes left. Add Flavor hops and Irish moss at 15 min. left, when there is one minute left turn of heat and add aroma hops. Remove the Cranberries, Chill the wort, pitch yeast when temp is below 76F, primary, add 1 oz. Cascades dry hops to secondary, bottle as normal.

OK, I have been sipping these slowly because I want enough to last for Christmas. This is a good Ale with a mild tangy overtone flavor. Cascades gives it a nice finish.

Great flavor, mild crandberry tang, Lousy clarity

This was a very popular beer among my Christmas guests. My only complaint was it would NOT clear. Nice color, slight red blush. It was as cloudy as a German Hefeweisen, making it look a little "pink!" I suspect it's because the cranberries are used in the boil and are high in pectin. I added Irish Moss as a clarifier, but otherwise followed the recipe explicitly. I bottled half and kegged half a batch. It ages well in the bottle, but never clears. I will make it again but try cranberries in the secondary instead of the boil.

Iron Mike, I am glad that you liked it ... it realy is a tasty brew, just forget about the cloudyness, IT'S HOMEBREW MAN :-)

Suggest eliminating the real cranberries in favor of cranberry flavoring added at bottling. Or alternatively add chopped cranberries to secondary.
