Imparts rich, sweet flavor. Use in Scottish ales, old ales and holiday beers.

Wyeast 2565 Kolsch
Wyeast 2565 Kolsch
A hybrid of ale and lager characteristics. This strain develops excellent maltiness with subdued fruitiness, and a crisp finish. Ferments well at moderate temperatures.
Notes
***NOTE THE ACTUAL OG WILL VARY FROM THE ABOVE DUE TO THE SUGAR IN THE CIDER*** --1/2 gallon starter of 2 cups of honey, cider, and champagne yeast --ingredients....4 gallons fresh cider, 9 lbs good orange blossom honey, 1 lb light brown sugar --boil irish moss for 90 minutes in 1 gallon of cider --add 5 sticks of cinnamin, 6 whole cloves, and 1 tsp each of dried bitter and sweet orange peel --bring honey and other cider to 150 degrees and hold for 45 minutes to pasturize --strain --add two ounces of yeast nutrient and 1.5 tsp of acid blend --cool off and aerate well --add starter and ferment until visible fermentation is complete --rack to secondary add 1 stick of cinnamin, one clove, and 1/2 tsp of both orange peels in a spice bag --leave spices in for 1 week --add 1.5 tsp polyclar after the spice bag is removed --wait until basically clear and rack to tertiary for 1-2 weeks --maybe even rack again untill crystal clear....but this shouldn't me a problem --DON'T FORGET TO CHECK FINAL GRAVITY --bottle with 1/2 cup priming sugar
