  • 2 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 10 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

Notes

Single infusion mash at 150 degrees. Sparge until 7 gallons in brew pot. Target hops put off a very sprucy flavor/aroma. I'll be drinking this around the winter holidays so that's what I am shooting for. I read somewhere that instead of using mollasses you could just pour a 5th of rum in just before bottling to raise the % ABV by 1-2%. So I did just that. Unfortunately the beer has a rum smell and taste that is a LOT more pronounced than I thought it would be. I recommend not adding rum to this recipe. Jusat add some mollassess at the end of the boil.
