  • .5 lbs American Caramel 40°L

  • 7 lbs Liquid Light Extract

  • 2.5 oz Centennial - 9.0 AA% pellets; boiled 60 min

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 1.5 oz Centennial - 9.0 AA% pellets; boiled 30 min

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

Put Crystal 40 into grain bag and steep at 150F. for 30 minutes. Remove from heat add light liquid extract, amber DME, and 2.5 oz. Centennial hops. Boil for 60 minutes. After 30 mins. add 1.5 oz. of Centennial hops. After 60 mins., cool to 72F. and transfer to primary and pitch yeast. Ferment for 3-7 days, add 1 oz. Centennial hops to secondary, rack to secondary for 7-14 days. Bottle and condition for 2 weeks!
