This is a delicious beer to enjoy during the hot days of July and August. We tried to minimize the spicy flavor that comes from too much corriander. A decoction method is critical to avoid a stuck mash and get the proper amino acids developed from the wheat. Cheers

Ingredients (All Grain38 gal)

  • 32 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 32 lbs Midwest Wheat Malt

    Midwest Wheat Malt

    Light flavor and creamy head. For American weizenbier, weissbier and dunkelweiss.

  • 8 oz Hallertau - 4.5 AA% pellets; boiled 60 min

    Good for all around bittering and finishing stock ales, Belgian ales, and continental style lagers. Aroma is mild, pleasant and flowery.

  • 2 oz Hallertau - 4.5 AA% pellets; boiled 15 min

    Slightly phenolic and tart, this is the original yeast used to produce Wit in Belgium.

Notes

Single decoction method used to break down wheat proteins. Orange peel and coriander added at the last 15 minutes of boil.
