Ingredients (Extract5 gal)

  • 1 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 6.5 lbs Pale Liquid; Alexanders

    Pale Liquid; Alexanders

    Reportedly lightest colored malt extract available.

  • 2 oz East Kent Goldings - 5.5 AA% pellets; boiled 45 min

    Mild, slightly flowery.

  • 2 oz Fuggle - 13.0 AA% pellets; boiled 2 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 1 tsp Irish Moss - (omitted from calculations)

  • BrewTek CL-920 German Wheat

    BrewTek CL-920 German Wheat

    A true, top fermenting Weizenbier yeast. Intensely spicy, clovey and phenolic. This yeast is highly attenuative and flocks in large, loose clumps. Use for All Weizen recipes and is particularly good in Wiezenbocks.

Notes

This is a very refreshing summertime brew.The East Kent Goldings brewed at 45 minutes keeps a low bitter profile but those who prefer it should go a full hour.The last 2 minutes of the boil,pour in the Fuggle hops.After 2 minutes,take the wort off the heat and wait an additional 5 minutes while stirring.Very simple and very consistent.Cheers:)
