  • 6.5 kg American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1 kg Midwest Wheat Malt

    Midwest Wheat Malt

    Light flavor and creamy head. For American weizenbier, weissbier and dunkelweiss.

  • 1 kg German Vienna

    German Vienna

    Increases malty flavor, provides balance. Use in Vienna, Märzen and Oktoberfest.

  • 1 kg Munich Malt

    Munich Malt

    Sweet, toasted flavor and aroma. For Oktoberfests and malty styles

  • 25 g Galena - 12.0 AA% pellets; boiled 60 min

    Galena

    Neutral. This hop can be very bitter, but blends well with finishing hops. Used in American ales and lagers, but suitable for all beer styles. Aroma is medium but pleasant.

  • 30 g Hallertauer Hersbrucker - 4.5 AA% pellets; boiled 20 min

    Mild to strong. 'Noble'.

  • 10 g Hallertauer Hersbrucker - 4.5 AA% pellets; boiled 5 min

  • White Labs WLP920 Old Bavarian Lager

    White Labs WLP920 Old Bavarian Lager

    From Southern Germany, this yeast finishes malty with a slight ester profile. Use in beers such as Oktoberfest, Bock, and Dark Lagers.

Notes

Step infusion mash schedule with a 30 minute rest at 132 F. 60 minutes at 152F. Recirculate the first 3 litres of run-off. I use this as my basic good drinking beer. For quick turn-around time I use ale yeast in this recipe. Someday, I may even attempt to clear it, but for now I drink it cloudy. Na Zdahroveh!
