Bork the magician

I ran out of hops and the store nearby was closed so, because I wanted to brew I thought I'd try an experiment. My starting S.G. is actually 1.064 meaning my mashing technique is better?

Ingredients (All Grain5 gal)

  • 5 lbs American 6-row Pale

    American 6-row Pale

    Tends to increase lautering efficiency due to a stiffer husk. May be used as the base malt for any beer style. The enzymes in all varieties of the current crop are sufficient to support high percentages of specialty malts and adjuncts.

  • 1.5 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 2.5 lbs White Table Sugar (Sucrose)

    White Table Sugar (Sucrose)

    Common household table/baking sugar. Lightens flavor and body of beer. Can contribute a cider-like flavor to the beer if not cold-fermented or used in large quantities.

  • 4 oz Ground French Roast Coffee - (omitted from calculations)

  • 4 oz Candied Ginger - (omitted from calculations)

  • Wyeast 1272 American Ale II™

    Wyeast 1272 American Ale II™

    Fruitier and more flocculant than 1056, slightly nutty, soft, clean, slightly tart finish.

Notes

All the ingredients go into the mash kettle with enough water to cover. about 2.5 gallons. Temprature and times... 95° 30 minutes 113° 60 minutes 135° 30 minutes 150° 100 minutes Starch test yeilds favorable results so I bring the mash to 170° for 10 minutes and then sparge over a spigited bucket with cheese cloth as the filter into the kettle. Boiling for about an hour and a half yeilds a couple of gallons of steam and about three gallons of product to add to the primary fermenter along with 2 gallons of cold water. Yeast is pitched from a previous secondary fermenter batch and away we go.
