Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.
Notes
Mash @ 154 F for 75 minutes. Sparge with 185 F water collect 12.5 gallons. Boil for 75 minutes add hops according to recipe. Pitch yeast starter of American Ale 1056. Primary for 5 days secondary for 7 days.
