Ingredients (Extract5 gal)

  • 6 lbs Dry Dark Extract

    Dry Dark Extract

    Used predominantly in the production of dark beers such as milds, browns, porters, and stouts.

  • 6 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 1 oz Centennial - 10.0 AA% pellets; boiled 60 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 1 oz East Kent Goldings - 5.0 AA% pellets; boiled 30 min

    East Kent Goldings

    Mild, slightly flowery.

  • 1 oz Saaz - 5.0 AA% whole; boiled 5 min

    Saaz

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

  • 1 oz 1 bajillion mosquitoes - (omitted from calculations)

  • White Labs WLP005 British Ale

    White Labs WLP005 British Ale

    This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.

AHA National Mead Day. After the events of the day, this brew has been renamed "Collinwood Torrential Braggot." This braggot was brewed at the Minnesota Brewers Campout - outdoors! After 30 minutes into the brew, it began raining and blowing so hard that I could not keep the stove lit. 3 hours later, the rain and wind let up enough to finish the boil. . It continued pouring and blowing all night long! The next morning, with tree limbs down all around us, I got around to racking and pitching the yeast. . Today I attached the blow-off tube because it had blown the cork and airlock off in the middle of the night!

Racked into secondary. VERY dark brown and malty, but honey is obvious too.
