  • 14 lbs Belgian Pils

    Belgian Pils

    Pilsner style malted barley grain.

  • 2 lbs Candi Sugar Clear

    Candi Sugar Clear

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 1.33 oz East Kent Goldings - 4.5 AA% whole; boiled 60 min

    East Kent Goldings

    Mild, slightly flowery.

  • 1.33 oz Saaz - 3.5 AA% whole; boiled 40 min

    Saaz

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

  • 0.66 oz East Kent Goldings - 4.5 AA% whole; boiled 15 min

  • 0.66 oz Saaz - 3.5 AA% whole; boiled 2 min

    Crisp dry fermenting yeast with big, fruity finish. Creates a nice balance for all types of apples, pears and other fruit or fermentables. Allows fruit character to dominate the profile.

Notes

1/2tsp Gypsum added to mash (mash pH ~5.1) 1/4tsp lactic acid added to sparge water (sparge pH ~5.7) started with 5gals tap water at ~140F (grist to water ratio about 1.5) Protein rest @130F for 30 minutes Sacc. rest @156F (dropped to 151F) for 60 minutes Mash out @172F ------------------------------------------------- Racked after 10 days. SG=1.017 Racked into two containers: First was 1Gal, with 9Oz blackberries added Second contained the rest. Non-blackberry beer bottled after 2 weeks. FG=1.017, Alc/Vol=9.0% This one tastes a bit too thin for a La Chouffe clone (the aim). I attribute this to the 1214 yeast which, compared to La Chouffe yeast, attenuates more and produces less esters.
